🛒 Ingredients

  • 1 lb ground turkey or shredded chicken (or chicken chunks)
  • 2 packets taco seasoning
  • ½ cup water
  • 1 can Bush’s black beans, drained and rinsed
  • 1 bag cooked cauliflower rice
  • Nonfat plain Greek yogurt (0 point sour cream substitute)
  • Spicy ranch (mix Greek yogurt with ranch dressing packet and chipotle seasoning)
  • Chopped lettuce
  • Diced tomatoes
  • Shredded cheese
  • Salsa
  • Green onions or chopped onion
  • Black olives

👩‍🍳 Instructions

  1. Cook ground turkey or chicken in a skillet until browned and cooked through.
  2. Add taco seasoning packets and ½ cup water; stir and simmer to blend flavors.
  3. Add black beans and cauliflower rice; mix well and simmer until heated through and flavors melded.
  4. Serve topped with Greek yogurt, spicy ranch, green onion, lettuce, tomatoes, cheese, black olives and salsa.
