🛒 Ingredients
- 1 lb ground turkey or shredded chicken (or chicken chunks)
- 2 packets taco seasoning
- ½ cup water
- 1 can Bush’s black beans, drained and rinsed
- 1 bag cooked cauliflower rice
- Nonfat plain Greek yogurt (0 point sour cream substitute)
- Spicy ranch (mix Greek yogurt with ranch dressing packet and chipotle seasoning)
- Chopped lettuce
- Diced tomatoes
- Shredded cheese
- Salsa
- Green onions or chopped onion
- Black olives
👩🍳 Instructions
- Cook ground turkey or chicken in a skillet until browned and cooked through.
- Add taco seasoning packets and ½ cup water; stir and simmer to blend flavors.
- Add black beans and cauliflower rice; mix well and simmer until heated through and flavors melded.
- Serve topped with Greek yogurt, spicy ranch, green onion, lettuce, tomatoes, cheese, black olives and salsa.
