🥬 Spinach Frittata (WW Friendly)

🛒 Ingredients
- 1 ½ cups fat-free cottage cheese
- 4 large eggs
- 1 cup sautéed spinach
- 1 cup chopped onion (or any other added veggies you like, such as mushrooms)
- ½ cup fat-free shredded cheese
- Salt and black pepper to taste
👩🍳 Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, whisk eggs, cottage cheese, and salt and pepper until combined.
- Sauté onion until soft, then add spinach and cook down briefly.
- Add sautéed vegetables to the egg mixture and stir in the shredded cheese.
- Pour into a greased pie dish or baking dish.
- Bake for 25–30 minutes, or until set and golden on top.
- Let cool slightly, then slice and serve!
