🍲 Zero Point Veggie Soup (No Lentils)

🛒 Ingredients

  • 1 tsp olive oil spray (optional for flavor, still 0 pts)
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, diced
  • 2 celery stalks, sliced
  • 1 zucchini, chopped
  • 1 cup green beans, chopped
  • 1 (14 oz) can diced tomatoes (no salt added)
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried Italian herbs
  • Salt & pepper to taste
  • Fresh parsley or basil for garnish (optional)

👩‍🍳 Instructions

  1. Spray a large pot with olive oil spray and sauté onion and garlic until fragrant.
  2. Add carrots, celery, zucchini, and green beans. Sauté 5 minutes.
  3. Add diced tomatoes, broth, herbs, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
  5. Serve hot, and garnish with fresh herbs if desired.
