🍲 Zero Point Veggie Soup (No Lentils)
Serving Size: 1½ cups | Prep Time: 10 min | Cook Time: 30 min
🛒 Ingredients
- 1 tsp olive oil spray (optional for flavor, still 0 pts)
- 1 onion, chopped
- 3 garlic cloves, minced
- 3 carrots, diced
- 2 celery stalks, sliced
- 1 zucchini, chopped
- 1 cup green beans, chopped
- 1 (14 oz) can diced tomatoes (no salt added)
- 4 cups low-sodium vegetable broth
- 1 tsp dried Italian herbs
- Salt & pepper to taste
- Fresh parsley or basil for garnish (optional)
👩🍳 Instructions
- Spray a large pot with olive oil spray and sauté onion and garlic until fragrant.
- Add carrots, celery, zucchini, and green beans. Sauté 5 minutes.
- Add diced tomatoes, broth, herbs, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
- Serve hot, and garnish with fresh herbs if desired.
