This chicken stir-fry with cauliflower rice is low in points, high in flavor, and super fast to make. Great for Weight Watchers meal prep!

🥢 Chicken Stir-Fry with Cauliflower Fried Rice

Servings: 2–3 | Prep Time: 10 min | Cook Time: 10–15 min


🛒 Ingredients

  • 1–2 boneless, skinless chicken breasts, cooked and sliced
  • 1 bag frozen stir-fry vegetables (no sauce)
  • 1 bag frozen cauliflower rice
  • 2 eggs (optional)
  • G Hughes Sugar-Free Sweet Chili Sauce (link below)
  • Salt, pepper, garlic powder to taste
  • Spray oil (0-point)

👩‍🍳 Instructions

  1. Sauté or bake chicken, slice into strips.
  2. In a large skillet, lightly spray with oil and cook stir-fry veggies until tender.
  3. Microwave cauliflower rice per package instructions. Optional: sauté rice in a pan and scramble in 2 eggs for a fried-rice effect.
  4. Add chicken to stir-fry veggies, season to taste.
  5. Drizzle G Hughes Sugar-Free Sweet Chili Sauce over the top (about 1 tbsp is 0–1 point depending on amount).
  6. Serve hot over cauliflower rice.
