🥢 Chicken Stir-Fry with Cauliflower Fried Rice
Servings: 2–3 | Prep Time: 10 min | Cook Time: 10–15 min
🛒 Ingredients
- 1–2 boneless, skinless chicken breasts, cooked and sliced
- 1 bag frozen stir-fry vegetables (no sauce)
- 1 bag frozen cauliflower rice
- 2 eggs (optional)
- G Hughes Sugar-Free Sweet Chili Sauce (link below)
- Salt, pepper, garlic powder to taste
- Spray oil (0-point)
👩🍳 Instructions
- Sauté or bake chicken, slice into strips.
- In a large skillet, lightly spray with oil and cook stir-fry veggies until tender.
- Microwave cauliflower rice per package instructions. Optional: sauté rice in a pan and scramble in 2 eggs for a fried-rice effect.
- Add chicken to stir-fry veggies, season to taste.
- Drizzle G Hughes Sugar-Free Sweet Chili Sauce over the top (about 1 tbsp is 0–1 point depending on amount).
- Serve hot over cauliflower rice.
