🍽️ Hearty Potato Soup

🛒 Ingredients
- 🥔 6-9 medium potatoes, peeled and chopped
- 🧅 1 cup chopped onion
- 🥕 2 cups chopped carrots
- 🥬 2 cups chopped celery
- 🥣 2 containers vegetable stock (32 oz total)
- 🥛 2 cups unsweetened almond milk
- 🧂 Salt and pepper to taste
👩🍳 Instructions
- Peel, chop, and boil the potatoes in a large pot until tender.
- While potatoes boil, sauté the chopped onion, carrots, and celery until soft.
- Drain the potatoes and return them to the pot.
- Add the sautéed vegetables, almond milk, and vegetable stock to the pot.
- Season with salt and pepper to taste.
- Simmer for 20 minutes, mashing gently with a spoon a few times while it cooks.
