🛒 Ingredients

  • 1 lb lean ground turkey
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 bell peppers (any color), diced
  • 1 (14 oz) can diced tomatoes (no salt added)
  • 1 (14 oz) can tomato sauce (no sugar added)
  • 1½ cups riced cauliflower (fresh or frozen)
  • 3 cups low-sodium chicken broth or vegetable broth
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

👩‍🍳 Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add ground turkey and cook until browned, breaking up as you stir.
  3. Stir in diced bell peppers, diced tomatoes, tomato sauce, and broth.
  4. Add Italian seasoning, salt, and pepper. Bring to a boil.
  5. Reduce heat, stir in riced cauliflower, and simmer for 15–20 minutes.
  6. Taste and adjust seasonings as needed. Serve hot.
