🛒 Ingredients
- 1 lb lean ground turkey
- 1 small onion, diced
- 3 garlic cloves, minced
- 2 bell peppers (any color), diced
- 1 (14 oz) can diced tomatoes (no salt added)
- 1 (14 oz) can tomato sauce (no sugar added)
- 1½ cups riced cauliflower (fresh or frozen)
- 3 cups low-sodium chicken broth or vegetable broth
- 1 tsp Italian seasoning
- Salt & pepper to taste
👩🍳 Instructions
- In a large pot, sauté onion and garlic until translucent.
- Add ground turkey and cook until browned, breaking up as you stir.
- Stir in diced bell peppers, diced tomatoes, tomato sauce, and broth.
- Add Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat, stir in riced cauliflower, and simmer for 15–20 minutes.
- Taste and adjust seasonings as needed. Serve hot.
